Fritters are the perfect treat to make a big batch of. You can make them at night and serve them for breakfast, pack them in lunches, or throw them in your backpack for a hike or park day! Your kids will never know how healthy these fritters actually are—because they taste too good!
1 bunch asparagus sliced & woody ends removed
1 cup corn kernels
4 green onions chopped & trimmed
3 ⁄ 4 cups cheddar cheese, grated
1 ⁄ 2 cup milk
1 cup flour
1 pinch sea salt
1 pinch pepper
1 pinch cayenne pepper *optional
Mix together asparagus, sweet corn, onions, eggs, cheese, and milk in a bowl. Stir in flour, salt, and pep- per and cayenne pepper (if using).
Heat a frying pan over medium-high heat and brush with a little butter. Cook about 1⁄4 cup of mixture at a time, in a pancake shape, for 2-3 minutes on each side or until they are golden brown.
Serve warm or cold, with any dipping sauce preferred.
