These yummy bars are a healthier, protein-packed version of rice crispy treats!
Ingredients:
1 cup peanut butter
3⁄4 cup maple syrup
1 tsp. vanilla extract
2 - 2 1/2 cups cocoa krispies
6 oz. dark chocolate
What You Do:
In a medium-to-large pot, melt 1 cup of peanut butter over medium heat. Once smooth, add 3/4 cup of maple syrup. Stir and combine until you have a caramel-type texture. Fold in 1 teaspoon of vanilla extract. Remove from heat.
Add your cocoa krispies 1 cup at a time until the desired texture. Adding too many krispies will cause them to fall apart so ensure there is still enough peanut butter/maple syrup to hold the crisps together. Stir, stir, stir! Add your crispies and peanut butter mixture to a pyrex dish. Flatten them out and create a level top.
Next, grab a mason jar or a heatproof glass to double-boil your dark chocolate. Your chocolate can be a bar or chips, your choice. Place chocolate in a mason jar and then place that mason jar in a medium pot of water over medium to high heat. Your chocolate will start to melt. Keep stirring until melted entirely. CAREFUL: your glass will be hot! Use a glove to take your chocolate jar off of the stove and pour your chocolate over the entirety of your peanut butter crispies.
Put in the freezer for 20 minutes and then enjoy!
